I realised I haven't posted a recipe in forever so as I finished up my festive baking I took a few snaps to show you how to make peppermint creams. I learnt how to make these in brownies and have just memorised the recipe ever since (the same with victoria sponge, god bless brownies). Peppermint creams are perfect to wrap in cellophane and throw in a christmas hamper, or to scoff by yourself after dinner with a mug of baileys watching a christmas film...
You will need one 500g box of icing sugar, peppermint flavouring, food colour of your choice, one sachet of egg white powder made as per the box.
The method is simple...chuck it all in and mix it up... okay maybe not quite that easy.
You want to sift the icing sugar in to a big bowl use about 3/4 of the box.
In a separate bowl mix the flavouring (about a teaspoon full or to taste) and egg whites.
Then mix together, split the mixture and add colour to half...or all. Try a teeny bit of mix now and add more peppermint if you fancy.
You want to consistency to be doughy and dry, if its not add more icing sugar!
Use the rest of the icing sugar to cover your worktop and rolling pin, roll out and cut.
Place cut stars on a cling filmed baking tray and leave to one side for at least an hour (until hard).
et voila! How easy was that?!
I've also been making lots and lots and lots of mince pies, Rosie has a cracking recipe here but you can also be super lazy and just use ready made puff pastry and shop bought mincemeat, make little sandwiches pastry : mincemeat : pastry seal the edges and bung in the oven at 200c for 15 minutes.
